Founded by the concept of creating amazing spirits from locally-sourced ingredients, Compass began production in July of 2017, with only the highest of standards and quality in mind. With only a few months under our belt, we opened the Compass Cocktail Bar & Tasting Room that October - because, why not?
NO PAIN, NO GRAIN
All of our spirits (our gins, vodka, whiskies - the whole lot) are made from Nova Scotian grown grains, as well as other raw ingredients like sugar and molasses. Locally-sourced botanicals, like juniper, cucumber, butterfly pea flower and ginger, create a striking palette within our gin recipes.
Between sourcing ingredients and development - the process is a lot of work, but it's worth it!
WE'RE ON CITE(ADEL)
Staying true to our Haligonian roots, we were elated to partner with the Halifax Citadel. Nestled in hidden stone alcove, you'll find our barrels aging.
Of course, we couldn't help ourselves when the idea of creating Citadel Aged-Spirits came to mind. Rich in flavour and history, there's a lot to experience with the Noon Gun Gin, Daily Ration Rum, Fort George Genever and Granite & Grain Whisky.
STILL HAVE YOUR ATTENTION?
We have accumulated an efficient assortment of production equipment, such as a 500-gallon (1900L) mash tun, four 1000-gallon (3800L) fermenters and two 500-gallon fermenters.
Our still (we named her Tess) is a 500-gallon Vendome Hybrid-Still, featuring a 20-plate vodka column and gin basket. Despite being born in Louisville, Kentucky, she's was raised the Haligonian way!
